Sweet Expo brings the pages of Sweet Magazine to life in a two day show dedicated to everything cake decorating, baking and celebrating at the Sydney Showground this August!

Learn from the best bakers, cake decorators and pastry chefs in Australia at hourly demos across our three stages.     Learn to make the perfect ‘basic buttercream’ for piping stunning buttercream flowers with Queen of the Piping Bag, Kerrie Wyer. Once you’ve learnt the basic recipe, you’ll learn to pipe beautiful buttercream roses on a nail and straight on your cupcakes, you’ll learn how to use buttercream in a mould, how to make sugared buttercream berries, how to texture buttercream, and pipe a basic border. This is a hands on class, you’ll decorate and take home six beautifully decorated cupcakes, and learn skills that you can apply to your own cakes at home again, and again!

    Special occasions deserve presents – edible presents are even better! Learn to create a modelling chocolate present box with our Goddess of Chocolate, Jessica Pedemont. In this half day class, you’ll learn how to make modelling chocolate and cover a small square cake* to create a present box. You’ll top it with a beautiful bow and modelling chocolate roses. Modelling chocolate is a great alternative to for people who don’t like the taste of chocolate, and this class is perfect for anyone new to cake decorating! *Participants will use a styrofoam ‘cake’, all skills learnt are easy to translate to cakes made at home.

    Meringue is often considered as one of the hardest baking techniques to master. Join Anneka Manning, founder of BakeClub and author of BakeClass, as she explains the science behind what happens when egg whites are whisked with sugar and give you the understanding and know-how to tackle the three main meringue-making techniques and how and when each are best used. You will leave this session with a bunch of meringue tips and tricks including piping and colouring techniques and the confidence, knowledge and inspiration to tackle a range of deliciously sweet meringue-based creations at home!

The techniques learnt in this class are easily transferred to cakes and cookies, and will help you to give life to flat images using bas relief techniques. Learn how to use images and break down various shapes, create a water splash effect, and bring images to life through shading with various layers of coloured dusts.
